Crianza de Jabalíes


El Jabalí es uno de las exquisiteces exóticas que se pueden probar hoy en Angol.

Dentro de las diferentes producciones que se generan en la capital de Malleco, se encuentra un muy peculiar y que prácticamente es única en la provincia.

A 6 km., camino a Collipulli en el sector el Parque, en una parcela de 12 hectáreas, frente a el fundo el vergel se encuentra esta crianza de jabalíes.
 
El jabalí es una especie que genéticamente se diferencia del cerdo común y corriente, por poseer un cromosoma menos, lo que se puede verificar gracias a un examen al ADN del animal. 
 
Respecto de su procedencia, el jabalí es de origen Europeo y fue internado en Sudamérica por colonos fanáticos de la caza de este animal.  Fueron los argentinos del sur que comenzaron a masificar el gusto por la caza del jabalí y posterior a aquello, se fue diversificando la forma de crianza y consumo. Hoy existen un gran número de estos animales que recorren los bosques del sur, en forma natural y salvaje, por lo que muchos dueños de fundos pagan buenas sumas de dineros para los que cacen Jabalíes desde sus predios.

El consumo de la carne de esta variedad porcina, no es tan masivo aún por su alto valor. Por lo anterior, que en color es de una tonalidad "concho de vino" y con poca grasa, lo que la hace muy sabrosa y nutritiva.
